Cauliflower “Potato” Salad

Want bring a side dish to a pot luck or BBQ that guarantees you have one healthy option but still impresses the group? You have got to try the “fauxtato” salad. It’s like potato salad but you swap the potatoes out with cauliflower so it’s lower in calories and carbs. It sounds kinda weird but trust us… this dish is a really great substitute that still satisfies the need for a tasty potato salad.

Ingredients

  • 2 heads cauliflower
  • 2 celery stalks diced
  • 1 cup white onion diced
  • 2 tablespoons apple cider vinegar
  • 1 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 teaspoon salt
  • 1⁄2 teaspoon ground black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Boil: water in a large pot, add cauliflower florets, and cook for 8-10 minutes.
  2. Cool: pour cauliflower into strainer and then run under cold water to cool it down.
  3. Mix: apple cider vinegar, mayonnaise, dijon mustard, salt, ground black pepper, celery, onions in a large bowl. Add cauliflower once cooled.

Tip if you have more time: You can add in some hard boiled eggs for extra protein. A lot of recipes use hard boiled eggs but we left them out since it saves a good amount of time and the salad still tastes great without them.
