Greek Ground Turkey Skillet With Sun-dried Tomatoes
Ground turkey is paired with veggies, rice, and feta cheese to make you feel like you're in Santorini without ever leaving home.
- 1/3 pound ground turkey
- 1/4 tablespoon olive oil
- 1/4 clove minced garlic
- 1/8 red onion
- 1/4 bell pepper
- 1/4 cup chicken broth
- 1 cup premade cauliflower rice
- 1/3 teaspoon dried oregano
- 1/3 teaspoon dried thyme
- 1/8 cup sun-dried tomatoes
- 1/4 cup fresh spinach
- 1 tablespoon lemon juice
- 1/16 cup olives
- 1/8 cup feta cheese
Prep: roughly chop bell pepper and onion.
Heat pan: add oil to a large skillet over medium heat.
Add: garlic, bell pepper, and onion to pan and cook for 1 minute.
Add: ground turkey, thyme, and oregano to pan and cook for 7 minutes, stirring frequently.
Add: chicken broth and cauliflower rice and cook for 5 more minutes.
Add: spinach, olives, sun-dried tomatoes and lemon juice. Cook until spinach is wilted, about 2 minutes.
Top: with feta cheese and season with salt and pepper to taste.
