I wasn’t in the mood for a buffalo chicken salad or a buffalo chicken wrap so I came up with this yummy buffalo chicken bites bowl. It has all the same flavors as a big plate of wings with carrots, celery, and ranch at a sports bar but with some added benefits of an extra serving of veggies.

Healthy Buffalo Chicken Bites Bowl

Ingredients

  • 2 pound chicken breasts boneless, skinless
  • 1 cup buffalo wing sauce
  • 3 tablespoon butter
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 pound baby carrots
  • 2 roma tomatoes
  • 1/4 red onion
  • 2 celery stalks
  • 1/4 cup blue cheese
  • 1/4 cup ranch salad dressing
  • 6 cups premade cauliflower rice

Instructions

  1. Preheat Oven: to 400°F.
  2. Melt: butter in the microwave (30-60 seconds)
  3. Stir: buffalo wing sauce with butter, garlic powder, and onion powder.
  4. Spray: rimmed baking sheet with nonstick spray.
  5. Prep: pat chicken dry with paper towels. Cut into small pieces and add to the baking sheet.Add: baby carrots to the baking sheet.
  6. Pour: wing sauce over carrots and chicken and toss to coat.
  7. Bake: for 15 minutes or until chicken is fully cooked. You can remove the chicken and leave the carrots in for 10-15 minutes longer, or until they’re tender enough.
  8. Meanwhile: microwave cauliflower rice according to the directions on the bag.
  9. Chop: celery, onion, and tomatoes.
  10. Assemble bowls: toss everything together and top with blue cheese. Add ranch dressing right before eating.
