This healthy taco salad is the perfect recipe to try out if you’re craving some good Mexican food, but don’t want all the carbs from the tortillas. This recipe is super healthy since it uses so many fresh ingredients and whole foods, plus it’s still super filling from the beef and avocado.

We think this salad is already pretty great on its own since every ingredient adds a unique flavor to the mix, but you can always add your own twist to this recipe.

If you wanna make things even more traditional, try adding some radishes to your salad! If you do want a little more crunch, try using low carb tortilla chips.

Healthy Taco Salad

Ingredients

  • 1/4 pound ground beef
  • 1/2 tablespoon taco seasoning
  • 1/4 head romaine lettuce
  • 1/4 cup shredded cheddar cheese
  • 1/2 roma tomatoes
  • 1/4 bell pepper
  • 1/8 cup salsa
  • 1/4 avocado
  • 1/16 cup ranch salad dressing

Instructions

  1. Cook beef: add beef and taco seasoning to skillet over medium-high heat. Stir frequently and cook until beef is browned and fully cooked (about 7-10 minutes).
  2. Assemble Salad: wash and chop produce while beef cooks, then add all ingredients to assemble salads. Add avocado and dressing right before eating.
