Low Carb Paleo Crockpot Chili

Want a hearty and savory chili without the carbs? You’ve come to the right place! This version of chili ditches the beans so it’s paleo, low carb and Whole30 friendly. We’ve listed stovetop and slow cooker directions so you can make it either way you like. This is a great recipe to cook in a big batch so you have enough leftovers to freeze or eat throughout the week. You’ll want to keep this recipe on hand year-round to warm you up on snowy days and bringing to 4th of July cookouts.

Ingredients

  • 1 pound ground beef 85% lean
  • 1 28 oz cans diced tomatoes with juice
  • 1 6 oz can tomato paste
  • 1/2 large yellow onion diced
  • 1/2 red bell pepper diced
  • 1 cup water
  • 2 garlic cloves minced
  • ½ teaspoon cinnamon
  • 1 tablespoon dried oregano
  • ½ tablespoon ground cumin
  • ½ tablespoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Slow Cooker Directions:
  2. Heat a large pot over medium-high heat. Add 1 tablespoon oil and saute garlic, onions, red bell pepper, ground beef and all spices. Cook for 8 minutes or until onions are soft and beef is browned (you can skip this browning step to save time and one less dish to clean but the chili won't taste as meaty and savory).
  3. Add beef, onion and pepper mixture to slow cooker.
  4. Add tomatoes, tomato paste, and water to slow cooker.
  5. Set slow cooker on high for 4 hours or low for 8 hours.

Stovetop Version Directions

  1. Heat a large pot over medium-high heat. Add 1 tablespoon oil and saute garlic, onions, red bell pepper, ground beef and all spices. Cook for 8 minutes or until onions are soft and beef is browned.
  2. Add tomatoes, tomato paste, and water. Bring to boil for 2 minutes.
  3. Turn down to low heat and simmer for 2 hours.
