One Skillet Garlic Chicken & Mushrooms

Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 cup mushrooms sliced
  • ½ tablespoon avocado oil (or other cooking oil)
  • teaspoon salt
  • teaspoon ground black pepper
  • 3 tablespoons butter
  • 3 garlic cloves minced
  • cup white wine

Instructions

  1. Heat the pan: add 1 tablespoon oil in a large skillet over medium-high heat. Nonstick pans don't work as great for making delicious pan sauces since the browned chicken bits (fancy culinary term for these bits is called "fond") that stick to the pan give the sauce more flavor. So avoid the nonstick pan if possible for this recipe.
  2. Prep chicken: Cut chicken breasts in half to become thin cutlets, pat dry with paper towels and season with salt and pepper.
  3. Sear chicken: 5 to 7 minutes on each side until browned, only flipping once. Try not to disturb the chicken or move it around a lot because this disrupts the browning. It will lift easily when it's cooked enough to flip to the other side. When done, set aside on plate.
  4. Cook mushrooms: Turn heat down to medium. In same skillet you just used, add 1 tablespoon butter, 3 minced garlic cloves and 1 cup of mushrooms. Stir mushrooms until soft and browned.

Make wine sauce:

  1. Turn heat up to medium-high. Add ⅔ cup white wine to the same skillet and scrape up all the browned bits off pan and stir with wine. Let sauce simmer for about 2 minutes to reduce liquid down.

  2. Stir in 2 tablespoons butter until melted.

  3. Grab plate with chicken and drain chicken juices from plate into the pan. Stir sauce and return chicken to pan to coat with sauce.
