Turkey and muffins aren’t usually a typical combination that people pair together, but these ranch turkey meatloaf muffins are the perfect hands-on dinner to try with your family tonight! They’re perfectly seasoned, savory, and so good that even the pickiest of eaters will find something to like about them. It’s easy to sneak in some grated carrots or other veggies into the mix if you want to make your muffins a little bit healthier.
These meatloaf muffins are filling enough on their own, but pair well with sautéed veggies and mashed sweet potatoes. If you’re not a fan of ranch, you can use mushroom or Worcestershire sauce instead.
Ranch Turkey Meatloaf Muffins
These ranch turkey meatloaf muffins are savory, filling, and fit perfectly into your meal prep Tupperware.
- 1/3 pound ground turkey
- 1/4 yellow onion
- 1/2 cup fresh spinach
- 1/2 egg
- 1/16 cup almond flour
- 1/16 tablespoon Dijon mustard
- 1/16 teaspoon salt
- 1/16 teaspoon onion powder
- 1/16 teaspoon garlic powder
- 1/16 teaspoon dried dill
- 1/8 teaspoon dried parsley
- 1/16 cup ranch salad dressing
Preheat Oven: to 350°F.
Prep: finely dice the onion.
Whisk: eggs in a large bowl.
Mix in ground turkey, onion, spinach, almond flour, Dijon mustard, salt, onion powder, garlic powder, dill, and parsley.
Spoon: the meatloaf mixture evenly into each muffin tin cup.
Bake: for 25 minutes or until the inside of the meatloaf reaches 165°F.
Serve: meatloaf with ranch dressing on top.
