This recipe has such a nice creamy flavor to balance out the spice of the buffalo wing sauce. You can use chicken breasts or thighs for this. It goes great in sandwiches, over cauliflower rice, in lettuce cups, or just by itself.
Slow Cooker Creamy Buffalo Chicken
- 2 pounds chicken thighs boneless, skinless
- 4 tablespoons cream cheese
- 2 cups chicken broth
- 1/4 cup heavy whipping cream
- 1/2 cup hot wing sauce
- 4 whole carrots
- 4 celery stalks
- 1/4 cup blue cheese
Prep: cut carrots and celery into 2 to 3-inch long pieces.
Add: chicken broth, heavy whipping cream, cream cheese, and hot sauce to the slow cooker.
Mix around but don’t worry about getting the cream cheese fully mixed since it will melt during cooking.
Add: chicken, carrots, and celery to slow cooker. Coat with sauce.
Cook: on low for 6-8 hours or on high for 3-4 hours.
