Meatloaf is great to make for meal prep because they’re super easy to make, and super filling and delicious at the same time. These tomato basil mini meatloaves are no exception – and they can be made in less than 30 minutes! All you really need to do is mix your ingredients together, plop the mixture into your muffin tin, and wait for the magic to happen.
You can also use this recipe to make some amazing meatballs – after you mix your ingredients together, just form the mixture into meatballs and bake them in the oven.
Tomato Basil Mini Meatloaves
These mini meatloaves are the perfect hands-on dinner to enjoy with the family.
- 1/3 pound ground turkey
- 1/16 cup fresh basil
- 1 tablespoon tomato paste
- 1/2 egg
- 1/16 cup almond flour
- 1/16 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon dried oregano
- 1/4 tablespoon balsamic vinegar
- 1/4 tablespoon olive oil
- 1/2 tomato
Preheat Oven: to 350°F.
Prep: finely chop the basil.
Make meatloaves: whisk eggs in a large bowl. Mix in ground turkey, almond flour, half of the tomato paste, salt, garlic powder, basil, and oregano.
Mix sauce: other half of tomato paste, balsamic vinegar, and olive oil in a small bowl.
Spoon: the meatloaf mixture evenly into each muffin tin cup.
Spread: sauce evenly over the top of each meatloaf.
Bake: for 25-30 minutes or until the inside of the meatloaf reaches 165°F.
Meanwhile: chop tomatoes and a couple more tablespoons of the basil. Mix balsamic vinegar and olive oil with basil and tomatoes. Add this topping to the meatloaf right before eating.
If you need a quick side dish for your meatloaves, you can use your leftovers to make a delicious and easy side salad.

- 2 cup mixed baby greens
- 1/16 cup salad dressing of your choice
Not like you need instructions for a side salad but…add dressing of your choice and any salad toppings you have in the fridge (cucumbers, cheese, onion, etc) to the lettuce.
