Cilantro Lime Shrimp & Avocado Salad

Ingredients

  • 1 1/2 pounds shrimp peeled
  • 4 tablespoons cilantro chopped
  • 2 tablespoons lime juice juice of 2 limes
  • 1 tablespoon olive oil
  • 5 garlic cloves minced
  • 1/4 cup red onion diced
  • 2 Roma tomatoes diced
  • 1 avocado diced
  • 1 jalapeño minced
  • Salt and pepper to taste

Instructions

  1. Heat pan: add 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Season the shrimp with salt and pepper.
  3. Cook: shrimp in pan for 2 minutes without moving them. Add garlic, flip shrimp over and cook 2 more minutes or until completely cooked and opaque.
  4. Cut shrimp: into pieces and let cool.
  5. Mix everything: mix shrimp with cilantro, lime juice, red onions, tomato, avocado and jalapeño in a bowl.
