Vegan Tacos With Zucchini, Corn, And Black Beans

Ingredients

  • 12 6-inch corn tortillas
  • 3 zucchinis sliced
  • ½ red onion thinly sliced
  • ½ can of canned corn
  • ½ can of black beans
  • 1 roma tomato diced
  • 2 tablespoons lime juice juice of 1 lime
  • 1.5 tablespoons taco seasoning
  • 1 tablespoon olive oil

Instructions

  1. Heat the pan: add 1 tablespoon olive oil and garlic in a large skillet over medium-high heat.
  2. Cook: zucchini and onions for 5 minutes.
  3. Add: corn, black beans, tomatoes, lime juice and taco seasoning. Cook for 2 more minutes, until vegetables are all tender but not mushy. Transfer everything from skillet to a plate.
  4. Heat tortillas: wipe down the pan with a paper towel or use a new pan to quickly heat the tortillas about 30 seconds on each side.
  5. Assemble tacos: add veggies to tortillas and top with any extra toppings that make your heart happy.
